Typically, a bundle of shingles measures 33.3 square feet, so you wont be able to get it all out of just one bundle. I'd go with two, assuming that there won't be any ridge capping or valley waste.

On the bottom eave of the shed, I might have trimed the end off that gable end fascia board so I could get the lower eave drip edge cut to wrap around the corner. I definitely wouldn't choose a gravel-stop gable drip edge. I also might put more nails in the headlap of the underlayment, so it can't blow around like that. Also, lower eave overhang should be at least one inch. I would also reccommend nailing the final row of shingles down over the ridge.
